Leftover cookies

A lot of the time – and I know I’m not alone here – the recipes I end up trying  have a lot to do with the food I have on hand that needs to be used up. Sometimes, what I have to deal with is a bounty of things left behind by ex-roommates. Today it was a couple of dreary carrots, the remnants of a bag of walnuts, and some some oats and coconut oil my friend Cathy left me when she moved back to the Philippines.

Heidi Swanson’s Carrot Oatmeal Cookies recipe made short work of the above ingredients with above average results.
