A lot of the time – and I know I’m not alone here – the recipes I end up trying have a lot to do with the food I have on hand that needs to be used up. Sometimes, what I have to deal with is a bounty of things left behind by ex-roommates. Today it was a couple of dreary carrots, the remnants of a bag of walnuts, and some some oats and coconut oil my friend Cathy left me when she moved back to the Philippines.
